Ramadan Mubarak!

Here is a delicious veggie Ramadan dish.  What you will need:- 1 kg potatoes, cut into cubes (boiled) 1 teaspoon garlic ginger paste 2 tablespoons oil  3 eggplant, sliced  1 teaspoon curry powder  1 teaspoon paprika  1/2 teaspoon turmeric powder  1/2 teaspoon black pepper  1 sweet pepper, cubed  1 tomato, roughly cut Salt to taste  50g tomato paste  1 cup of water  Juice of 1 lemon  100ml coconut cream  What to do: In a pan over medium heat, add in your oil and then go in with the eggplant.

Sauté until golden brown, then go in with your spices: the black paper, turmeric, curry powder and paprika.

Continue to cook until fragrant; add in your garlic paste and mix well.
