Ingredients: 1 tablespoon of oil 1 large onion, chopped 2 carrots, peeled and sliced 2 celery stalks, sliced 3 cloves garlic, minced 8 cups chicken broth (or stock) 2 cooked chicken breasts, shredded 1 teaspoon dried thyme 1/2 teaspoon dried rosemary 1/4 teaspoon black pepper 1 bay leaf 2 packets of noodles Fresh parsley, chopped (for garnish) Salt to taste Instructions: Heat your oil in a large pot over medium heat.

Add the chopped onion, carrots, and celery.

Cook until the onion is softened, about 5-7 minutes.
